I had a similar background, I decided on engineering and it's not an easy education, but if you can stick with it the return on investment just keeps getting better. In order to get valuable soft skills, do a sales job or a customer service job where you have to talk to people from all walks of life in between semesters. As far as continuing to keep up your medical knowledge get a personal trainer license and maintain it with additional cert additions. It's a great side hustle for when you are just starting out working your engineering job out of college. It keeps you in shape, make your own hours, and most of the time it's around the normal workday. Honestly, this plan only works if you are better at solving problems than memorizing information. If memorization is your bread and butter than the medical field is ideal for you. Most of the time it's less creating a solution as much as moving through a step-by-step process to identify an issue then implement the solution that has already been discovered.
